Cream. Creamy. Creaminess.
Not something you can get much of and have it be tasty when you’re a Vegan in my experience. I decided to invent a vegan Korma, and I’m pretty pleased as to how it turned out!
I initially intended this recipe just to have the cauliflower, but adding Quorn Vegan chicken fillets was a good move on a hungry day! Whether you eat this as a curry or just use the sauce for chips, it’s very tasty and indulgent and I am loving it!
As always, my ingredients list is approximate and you should always taste and add more of whatever you think you need!
This recipe will feed 2/3.
For the sauce…
- 2tbsp sunflower or vegetable oil
- 2 brown onions
- 1 large parsnip
- 4 tsp ginger paste
- 4 tsp garlic paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- ¼ tsp chilli powder
- 3 tbsp mango chutney
- 100-200ml vegetable stock
- 1 tin full fat coconut milk
- 1 generous handful of spinach per person
- fresh coriander leaves, to garnish
For the roasted cauliflower:
- 1 head of cauliflower
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground turmeric
- ¼ tsp mild chilli powder
- 1 tsp ground ginger
Method
- Set oven to 200°C and bring a pot of water to the boil.
- Cut the cauliflower into florets. Boil for 5 minutes, drain and pat dry.
- Sprinkle with the spices and then roast in the oven for 10-15mins (ish).
- Finely dice the onions and grate the parsnip.
- Cook the onions until soft. Add parsnip and cook for a few minutes.
- Add the spices and cook for 2 minutes, but be careful to ensure they don’t stick to the bottom of the pan and burn.
- Add the garlic and ginger purées, mango chutney, stock cube and 200ml water. Use extra water if it seems too thick.
- Simmer to reduce the stock by half.
- Remove from the heat, add the can of coconut milk and liquidise the sauce with a blender.
- 6. Return the sauce to the heat through – you can wilt some spinach in at this stage if you like!
- 7. Top with your roasted cauliflower and some fresh coriander! Enjoy!
